Homemade Gluten Free Banana Bread


Who doesn't love a monkey with a banana? Who doesn't love homemade banana bread? No one in my family! The problem lies in the fact that I have two celiacs in the house, as you know, so I've had to adapt most of our favorite family recipes to gluten free. Today I'm sharing Grandma Hazel's Banana Bread recipe made gluten free. 


Grandma Hazel's Banana Bread

1 Cup Sugar
1/2 Cup Shortening (I use butter flavored Crisco)
2 Eggs
1 Tablespoon Sour Milk 
(don't use just milk. If you have lemon juice or vinegar add a small amount to the milk until it curdles)
Beat above until creamed

2 Cups Gluten Free Flour - 
Make sure you spoon the flour into the measuring cup and tap lightly on the side of the cup. Scooping from the bag will pack the flour down and you'll end up with too much flour.
(I use Pillsbury premixed in the bag that has Xantham gum added. You can substitute any flour you use and add the required xantham gum for the amount of flour)
1 tsp Baking Soda 
(I was out so I used 3 tsp baking powder and it worked great)
1/2 tsp. Salt
2 Large Bananas mashed

Mix into the creamed mixture and pour into 1 large loaf pan or 3 small.
Add chocolate chips or nuts depending on preference

Bake at 325 for 1 hour for large loaf pan and 45 min for 3 small 
(350 for any pan not glass or dark nonstick)
(Check with toothpick until it comes out clean)

Once baked you'll not only have the wonderful smell of homemade banana bread floating through your home, but your family will love you for the special treat!
