Gluten-Free Banana Bundt Cake

Doesn't that look tasty? If you love bananas, you'll love this gluten-free banana cake!

Gluten-Free Banana Cake

1.5 cups white sugar
1 cup mashed bananas (I use 3 decent sized bananas and don't bother to measure)
1/2 cup buttermilk or sour milk (I used sour milk and it was fine)
1/2 cup shortening
2 eggs
1 teaspoon vanilla
Mix above

2 cups all-purpose gluten-free flour (I use Pillsbury or Walmart brand)
1.5 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon Cinnamon (Optional. I make it both ways depending on what mood I'm in)
1/2 cup chopped walnuts (optional)
Add to above and beat for 3 minutes on medium or until mixed.

You can use the bundt pan, 2 greased 8 inch round pans, or a 9 x 13. Bake at 350 for 30-35 minutes (the bundt took more like 40-45 so watch that). Toothpick will come out clean. Cool.

Drizzle with icing
1 tablespoon butter melted
1 cup (or so) powdered sugar
touch of vanilla
2 tablespoons milk

Mix until drizzle consistency. (Obviously, add more liquid or sugar until it's the consistency you need)

That's all there is to that bad boy! You'll have yourself a lovely, moist, tasty cake everyone will devour. Enjoy!
