Gluten-Free Craisin White Chocolate Chip Oatmeal Cookies


That's a mouthful, isn't it? I agree, but these cookies are so yummy! I made a batch the other day and they are already gone. These are great cookies for parties and get-togethers as well! I make a version at Christmas that includes cinnamon, but the rest of the year I don't use the cinnamon. Is that weird? Maybe, but you can feel free to do it either way any time of the year! Check out the recipe below.

Gluten-Free Craisin White Chocolate Chip Oatmeal Cookies

3 eggs
1.5 cups of Butter Flavor Crisco
1 cup brown sugar
1 cup white sugar
1.5 T hot water
1.5 t. vanilla

Cream above ingredients

2 1/4 cup gluten-free all purpose flour (I use either Pillsbury or Great Value. Feel free to use regular flour, same amount, if you don't have to be gluten-free)

1.5 t. soda
1.5 t. salt
3 cups Quaker gluten free oatmeal (Or any oatmeal you know is gluten free. Feel free to use regular oatmeal if you don't need gluten-free)

Mix into wet ingredients. Once well-mixed add:

A 6-ounce bag of dried cranberries any brand (Craisins)
A bag of white chocolate chips any brand that is gluten-free (Yes, the whole bag!)

Mix in well. Your batter will look like this:


Bake at 375 for 10 minutes, adding a minute if not brown.

Cool on rack. 


You'll get a whole lot of cookies, but I promise you, they'll disappear before your eyes if your family loves cranberries like we do here in Wisconsin! These are a fun treat for a shower or church event, and would sell wonderfully at any bake sale. Especially made gluten free because it's tough to find anything to buy at sales when you can't have gluten!
